12 Of The Gold Coast’s Best Chefs Awarded National Prize

ONE of the Gold Coast’s youngest head chefs has performed a two-hat trick after being awarded a prestigious national award for the second time.

Culinary whiz Jayden ‘JD’ Barker opened Broadbeach Waters hot spot Nero Dining less than two years ago, and the 22-year-old has already received two Chef’s Hat awards from the Australian Good Food Guide (AGFG).

“They do their research on menus that catch their eye and dine anonymously so you always have to be on the top of your game,” Mr Barker said.

“The Chef’s Hat awards are chosen based on everything from plating up to the ingredients you’ve used … we’re not doing the whole pork and apple sauce thing, we try to put ingredients together that you’ve never tried before.”

Mr Barker said one of the strangest items on his menu was samphire, a type of sea asparagus.

“We use it in a dish with roasted lamb,” he said.

“We buy it from a supplier out in Tallebudgera Valley, I haven’t seen any other Gold Coast restaurants using it.”

Mr Barker, who started his hospitality career at 14 as a dish hand, said he was honoured to be among the 12 Gold Coast chefs awarded the top prize.

“I run the restaurant with my dad (and) an award like this really just reaffirms everything we’re doing.”

Chef hats were also awarded to the head chefs at: Room 81, Kiyomi, The North Room, The Fish House, Vanitas, Videre, The Blue Door on 5th, Social Eating House & Bar, Seaduction Restaurant + Bar, Mamasan Kitchen & Bar and Little Truffle Dining Room & Bar.
